How much does a custom food truck cost in Salem?
Compact builds start around $50,000, mid-size kitchens run about $70,000 to $80,000, and large trucks start around $110,000. Your menu class matters too: a Class IV unit cooking raw proteins needs more equipment than a Class II coffee cart.
Do you help with Marion County health permits?
Yes. We provide the scaled floor plan, equipment specs and tank sizes Marion County asks for in plan review. The county expects at least 5 gallons of fresh water for handwashing, at least 30 gallons if you wash dishes on board, and a wastewater tank 15% larger than the fresh tank. The City of Salem also requires its own mobile food unit business license for each truck, renewed every year.
How long does a custom build take?
Standard builds take 8 to 12 weeks from approved layout to pickup. If you need to open sooner, ask about pre-built units at our Clackamas shop.
